1.) Love both. Depends on the meat.

3.) Put all leftover veggies(onions, celery, garlic, peppers, etc.) from fridge and place in bottom of steam pot. Put one quart water, two beers, two glasses of white wine for boiling liquid. Place oysters in pot on top of veggies and pour beer on oysters. Then cover oysters with old bay. Boil till slightly open. Got this recipe from Marco Island, Florida and have never looked back.
4.) Hate first dates, people get together by random chance. If you force it, it will flop.
