cold weather food


Well the weather outside has turned for the worst and as the temperature drops below 30 for like the 2 time this year, what makes for a better cold weather night then a nice hot bowl of chili. And since crock pots are in this season, well I don’t know if they are or not but I have one so that should count for something. Here is a nice crock pot chili recipe.

INGREDIENTS:
vegetable oil, about 2 tablespoons
2 pounds lean ground turkey or half lean ground beef and half lean ground turkey
1 large green bell pepper, chopped
1 cup chopped onion
1/4 teaspoon garlic powder
salt and pepper to taste
1 large can (28 ounces) tomatoes in puree
1 1/2 cups tomato sauce
1 or 2 cans (15 ounces each) kidney beans, drained and rinsed
1/4 cup of beer or broth
2 to 4 tablespoons of honey or brown sugar, or to taste
2 envelopes commercial chili mix (for 2 pounds meat)
dash of cayenne pepper, to taste
shredded Monterey Jack cheese, or mild Cheddar cheese
PREPARATION:
Heat oil in a large kettle or Dutch oven. Brown ground turkey. Add remaining ingredients and simmer for 1 1/2 hours or more. Can also be cooked in the crock pot, after the ground turkey has been browned.
Top with grated cheese (Mozzarella, cheddar, or Monterrey Jack), sour cream, oyster crackers, chopped onions, taco chips, etc.
